TGIT

I needed this day off. We've been crazy busy as always near a holiday. I'm so thankful for my no weekends and no holidays position. It's been a very long time since I've been in a position like this and I'm enjoying it immensely. Last Christmas, my kids were home alone while my husband and I both worked. That was sort of sad. Not anymore though so maybe soon, they'll stop asking me if I'm working Christmas this year. My menu is planned and all the fixings are in the house. Not a thing is prepped-unless you count the fact that the turkey is at least thawed out (it was fresh, not frozen or this year would have been a complete disaster).

I don't say thanks for visiting nearly often enough, but today I will. Thanks for coming by and reading what I have to say and leaving your interesting and always varied comments. Have a great day.

I hope your dinner all goes well and that there are plenty of leftovers.... nothing like left overs!

(and good for you for not working holidays. there was a time when I finally told the bosses that "hey, if there's snow, I'm not coming to work!!" It took a lot of internal pressure off. fortunately, we don't have snow often.)

Remember that when the turkey is taken out of the oven, it keeps on cooking..So, remember, don't over cook and use a meat thermometer!

Short of a miracle? You whipped that dinner together in less than 5 hours....my only regret was snacking throughout the day...I was too stuffed to have seconds. I made it a point to come by 41 hours later for left overs... I was in the mood for stuffing, and mashed potatoes. I settled for a turkey sandwich. Not that I'm surprised, but someone ate every last ounce of the stuffing & potatoes. I say for christmas we should get our own fridge (like college students have) and keep leftovers in it for us.
